Plain curd is the solid portion of milk before it becomes an actual piece of cheese. Most people dont know that plain curd can be eaten just as you would eat cheese. The plain curd is very dense, soft, and has a milky texture.

At some point all cheeses are plain curd. Plain curd is an essential ingredient for cheese because without it cheese could not be made; its how the curd is processed that determines what type of cheese it will be. For example, when you stretch curd it becomes Mozzarella, when you cook curd it can become Emmentaler (swiss) and Gruyere, and when you stack curd in long sheets it becomes cheddar.
