Cheese: Cajun Curd
June 21, 2008 – 12:50 pmCajun curd gives a little taste of the South. This type of cuisine is spicy and full of zest. The flavor for most cajun dishes comes from onion, celery, and peppers that are finely chopped.
Cajun specialties include jambalaya, gumbo, and cornbread. Rice is the main staple of most cajun dishes. Adding cajun curds to any of these dishes would create a meal that is out of this world.
What is Cajun Curd?
The curd is the part of the cheese that begins the solidification process. Its not quite cheese but its not milk, so its texture and its taste fall in between milk and cheese. Normal cheese curd is very mild and milky tasting, but cajun curd is spicy because it has traditional cajun spices.
When eating cajun curds as a snack I recommend eating them with cornbread, butter crackers, tortillas, and tortilla chips. These types of foods are bland and help to even out the spiciness of the cajun seasoning. When you try cajun curds your mouth and stomach will thank you.
